05/19/2026: We have cooked this many, many times. Now that steak takes a home equity loan to buy, we can say that this works for lesser cuts; it's just not quite as tender. Also you can often fit two in a big cast iron skillet, and may need to then add a little time to both steps of cooking
We love these! Besides being cooked through, be sure the breading is crisp; leave them longer after they reach 165F, if necessary. They will remain tender and juicy, with the extra time.
*Note that some people with IBS (for whom this is often made) may also prefer extremely mild chiles. *One could experiment with Tomatillos also, although that causes my husband problems with diverticulitis. *Take care with the chile powder; even a bit of garlic salt or onion powder can cause some people problems.
