David liked it - and I liked the sauce - but I now know: don't forget the purple cabbage! Cilantro garnish, as well as green onions, is essential, in my opinion! And adding animal protein (like chicken or fish) works.
No celery in the house. Added much more onion, a teeny bit of liquid smoke, smoked paprika, and garlic powder. I even used Potatoes O'Brien from the frozen food section! Fantastic on a cold night.
You could make this a gooey, cheesy pizza, but that's not my preference. TJ's regular pizza dough is better than the whole wheat or herb, IMHO. This can be done without a pizza stone or peel (that monster pizza spatula); it just takes longer. 083125
061625: By the time this is cooked in a pressure cooker, it hardly matters what cut it is. If you use pork shoulder (or something boneless), cut the time under pressure down to 35 minutes. It worked fine under this scenario to manually release after 10-15 minutes. VERY tender!
