Note that this is adaptable to various dietary practices or needs. It could be lo-carb or lo-fat, depending on what you do with it. It breaks all rules of common sense for it to be both though, in my opinion. Also be careful of the alcohol effects sneaking up on you. It's delish, but try to sip it, OK?

Our fave Instant Pot recipe. We take away 1/2 C water and add 1/2 C more wine. Thaw and dry meat before searing it, in order to get a good carmelization. Also, do the meat in small batches, so the Instant Pot saute function is not taxed. High heat is important! Lastly, the ratios of ingredients are good in this recipe, but we add a bit more potatoes, anyway.

NOTES:
Fancy schmancy fast chopping is a good way to lose a fingertip, so I take my time and chop everything finely. This can take me a half hour to prepare.
I like the taste of white - not red, and not yellow - onion in this. Your mileage may vary.
Skipping the cilantro is only valid if you have somebody who tastes soap. Otherwise, more is better.
Sometimes I use Knorr's powdered soup bouillon, instead of salt. More flavor, you see.
If you don't have lime juice, you can use margarita mix, preferably without tequila (although . . . hmmm).
Best if it sits for several hours, or overnight in the fridge. Keeps well in the refrigerator, covered for up to 4 days.
Forget the slotted spoon! Sit at the table and use a bib if you have to. Pull the tablecloth back; that's when you know it's gonna be fun!

1 3/4 C water, because of the 1/4 C Lemon juice. All liquid should achieve the magic 2:1 ratio with the rice

My notes: Feb. 1/ 2025
a. Try chopped tomatoes or less tomato sauce . . . or try it in the oven. A cup of sauce made it stick to the bottom of the pan (even as it was delicious).
b. I added ½ chopped onion and a 7oz can of medium chopped green chilies.
c. Maybe because of the tomato sauce issue, this took closer to 50 minutes to cook
