We haven't gotten these to be moist enough yet. We're going to try searing them first next time . . . and carefully watching the internal temp, so they're not overcooked.
NOTE: I edited this for Instant Pot - watch cooking time next time I do it, to be sure it's right. This would work stovetop (meat prob less tender), or crockpot, too though *Use 2.5 lb of Costco Tenderloin and set servings to 5 portions - The enchilada sauce in this makes it very flavorful. It's only as hot as the chiles and the sauce; you're in control.
