There’s been a lot of noise online lately about whether it’s possible to eat on $15 a day. Of course, that number assumes food—not delivery fees, Starbucks lattes, bags of Takis, or the other conveniences that have quietly become staples of American consumerism.
I find the debate fascinating because there’s a loud segment of people who genuinely believe it’s impossible to eat within that budget outside of something resembling prison food. Anyone who’s followed my cooking for years knows this misses the point entirely. Not only is it possible to eat well on a limited budget, but in many cases, the less expensive, underutilized cuts of protein, vegetables, and grains are actually more flavorful. They just ask more of the cook.

Makes a lot. It's quite rich. I might try to find a lighter substitute for the ricotta or just reduce the amount. Froze about 3/4 of it, so we will see how it works for making ahead.
