made on 10/8 yummy results. used safeway pork shoulder country-style "ribs". still very tender, fell off the bone, even though we did "quick release". made with 1 bunch of celery and 1 box of mushrooms; cooked down a lot. Could decrease the meat potentially and increase the veggies? with the veggies, did not need the chicken stock - enough liquid. substituted oregano for rosemary. used 4 cloves of garlic instead of 12. cozy/comforting meal. would also be great with roasted veggies to balance out the meat since the veggies cooked down so much.
made 10/24 - a hit with all 3 of us! made with a few carrots, a few celery stalks, a box of mushrooms (yum), TJs bolognese sauce, TJs garlic and herb sausage (cooked separately), TJs rigatoni. so good! we liked the bigger chunks of veggies (easier to feed baby too). would be interested to try it with zucchini. made a solid 4.5 servings (dinner for us 3 and lunch for us 2) - a bit more sauce left over. good weeknight dinner to prep veggies ahead of time.
Yum! Next time, try with peas and potatoes. Celery, carrots, and mushrooms really cooked down well. Would be great with sourdough bread. Seared chuck from Costco was delicious. Maybe do *either* celery, carrots, mushroom *or* peas, carrots, potatoes... also if using celery and mushroom, decrease the amount of beef stock.
