1. substituted poblano peppers for bell.added two stalks of celery. doubled the garlic. 2. added ground coriander to spice mix.cut too much green onion, cilantro, and parsley. threw it in the sauce to cook down. 4. put in feta when cooking eggs 5. put in more feta as well as melty cheese (we used Oaxaca) and serve. we served over basmati rice with toasted flour tortillas on back-up.
Added snow peas, and used 1 large thai pepper, and 5 small thai peppers, de-seeded. Doubled the garlic. Added fresh ground black pepper to chicken while frying. Will add sesame seeds for garnish next time.
Did not have fermented shrimp paste, doubled the fish sauce. used 1 TBSP garlic/ginger paste in lieu of minced garlic and ginger. Omitted onions and garlic chives, added carrots and green onions.
