I got a bit aggressive and used a bit more of mustard powder, coriander, salt, vermouth and used red miso which has a stronger taste.
I also used refined coconut oil instead of vegetable oil, and melted it separately, mixed everything else first then added the melted coconut oil to the mixture, then cooked as directed. Hoping this will make it more solid and spreadable or sliceable for sandwiches, etc
Did a side by side taste test with the real thing and I think the other increases were ok, but the miso should be the mild version, and salt kept to the amount in the recipe.
Also C says it’s too ‘starchy’ or ‘floury’.
I also cooked it at 95C instead of 90C.

First round of this recipe yielded unbalanced rempah - fried 2-3 Tbsp of ot to test, made a laksa, and definitely unbalanced. Too bitter and too much turmeric, and some ‘roundedness’ was missing. so this is the augmentation step - adding more to the base, which is mostly still raw.
Added:
10g dried chilis - 20g after removing seeds and soaking in hot water.
200g shallots
5 garlic cloves or 20g
6 macadamia nuts
20-23g ginger
50 ml water
Blend as in instructions for making the raw paste in step 1
