Really tasty! I used an entire bag of chopped kale from trader Joe's, followed the top comments, and didn't read the instructions in the right order so I kinda had to improvise. But this turned out yummy!
A nice twist on shepherd's pie with a slightly Asian twist! It made a lot, so I had to bake in two separate cast iron skillets. But tasty! Also yes you do need to peel the potatoes or you'll end up with large skin parts ...
Like most Indian curries (that might be redundant, but oh well), this is super versatile and easy to make! I did modify the instructions because some of them were combined and I put the steps in the wrong order, but it all turned out fine. I used tofu instead of paneer bc it's what I had. Turned out great!
I would lower the temp a tad and add more oil, but that could be because I used A LOT of veggies. 3 stalks broccoli, 1.5 bell pepper, almost a full onion, mushrooms, a pint of cherry tomatoes... you get it.
