So tasty, and highly customizable! I really enjoyed the sweet and sour tofu, and the mixture of textures is fantastic. Sometimes the nori gets soft and chewy, but that happens. Also goes great with some home canned spicy tuna mix!
Easy to make and a great way to use up stuff in the fridge - I dropped the corn and cilantro, used feta, doubled the lime, no vinegar, roasted the zucchini for extra flavor, and I used as much pickled jalapeno in my fridge as I had. Great vegan recipe full of nutrients, flavor, and fiber!
